Wash and
Clean the
squid, separating the outer sacs from the heads andtentacles, removing and
discarding the translucent cartilage, and smallsand bag and ink. Rub salt on
the outer sacs and rinse them inside and outwith cold water. Heads and
tentacles should be rinsed thoroughly. Cut thesacs into 1/2-inch wide rounds.
Heat the oil in a frying pan and sauté onions,green chillies.When the onions
become light brown,slip in the squid rounds,chilli powder ,coriander and
pepper,garam masala,curryleaves and salt. Cover and simmer until tender
(approximately 30 minutes.
